Portuguese Cookies - This crisp little sugar cookie recipe from the island of St. Michael in the Azores. They are a very traditional Portuguese butter cookies. They are one of the best treats in Portuguese dessert making.
Ingredients
- 2 ¾ cups all-purpose flour
- 2 tablespoons cornstarch
- 1 cup granulated white sugar
- ½ cup brown sugar
- ½ teaspoon salt
- 2 teaspoons baking powder
- 1 cup unsalted butter, room temperature
- 1 teaspoon pure vanilla
- 2 large eggs
- Coating: 1/3 cup granulated white sugar
Method
Step 1
Preheat the oven to 375 degrees F, place rack in center of oven.
Step 2
In a bowl combine the flour, salt and baking powder and mix well.
Step 3
In another bowl add the cornstarch, white and brown sugar, butter, vanilla and beat in the eggs.
Step 4
Add the flour mixture a little at a time into the butter and eggs mixture. Mix together well.
Step 5
Refrigerate the dough for 30 minutes.
Step 6
For each cookie take 1 tablespoon of the cookie dough and roll into a ball.
Step 7
Take each ball and roll into the Coating (1/3 cup sugar) then press down to the shape of a cookie.
Step 8
Place cookies 2 inches apart on a ungreased cookie sheet or use parchment paper.
Step 9
Bake for 8 to 10 minutes, until cookies are golden brown at the edges.
Step 10
Allow cookies to cool for 10 minutes
